The Fall Haul: Recipes for All Your Autumn Veggies

Summer farmers’ markets may have come and gone, but that doesn’t mean there’s a lack of tasty vegetables to spice up the season. In fact, you may find yourself with an abundance of many fall crops such as kale, radishes, beets, carrots, gourds, and of course, pumpkins. If you’re wondering what to do with your fall haul, look no further. We’ve rounded up some of the best recipes your family will love just in time for the season.

Curbing the carrot craving

If you find yourself with a lot of carrots, there’s no need to worry. Carrots can be cooked in a variety of ways, spicing up dishes as a side or even creating a stunning dessert. 

Garlic parmesan roasted carrots: Requiring only five minutes of prep time, this excellent side dish will make your kids want to eat more veggies. 

Carrot gnocchi: If you’re feeling particularly ambitious, you can turn your carrots into a delicious and beautiful gnocchi. It takes a bit of time to prepare, but you’ll wow your family with this dish. 

Carrot cake: A classic dessert, and a surefire way to convince even the pickiest of eaters to come to the table for this special treat. Add pecans to the top for some crunch!

Put the rad back in radish

Radishes are another common fall crop. Popularity in the garden doesn’t always translate to acclaim at the table—but with the right preparation, these are vegetables anyone can root for. 

Radish and white onion slaw: If you find yourself missing summer, call back those memories of warmer days with this refreshing slaw.

Pickled radishes: Squeamish about making radishes a main event on your plate? Pickle them, then use them as an ingredient in tacos, sandwiches, or other dishes. 

Brown butter radishes: Toss the tuber into a bath of delicious brown butter while still preserving the natural crunch of the radish, and you’re in good shape.

Party on, pumpkin

Of course, we can’t have a list of fall recipes without including pumpkin. And don’t worry: We’re going to include a pumpkin pie recipe, too.
