Root Vegetable Casserole
This casserole proves that healthy can be delicious. It could be a substitute for stuffing, or a stand-alone dish for any dinner! Add cheese on top for a special treat.
You’ll Need:
- 1 cup parsnip in cubes (peeled)
- 1 cup rutabaga in cubes (peeled)
- 1 cup turnip in cubes (peeled)
- 3/4 cup carrots, coarsely chopped
- 1/3 cup onion, chopped
- 2 eggs
Directions:
- Boil the veggies with 2 cups of water in a saucepan; simmer until tender (about 12 minutes), then drain
- Preheat the oven to 375 degrees
- Sauté onions in butter, then mix into veggies; add a dash of nutmeg, salt and pepper, and the eggs
- Scoop the mixture into a 1-quart casserole baking dish and bake uncovered for 35 minutes
Roasted Brussels Sprouts
Brussels sprouts have a reputation in the vegetable world. Thanks to pop culture and their sulfur smell, Brussels sprouts are often viewed as the Darth Vader of vegetables. However, with the right recipe, roasted Brussels sprouts are delicious. Don’t believe us? Try it for yourself!
You’ll Need:
- 1 ½ pounds of Brussels sprouts
- 3 tablespoons olive oil
- 1 teaspoon kosher salt
- ½ teaspoon of pepper
Directions:
- Preheat oven to 400 degrees
- Cut off brown ends of Brussels sprouts and any yellow outer leaves
- Mix all ingredients in a bowl until Brussels sprouts are coated
- Pour onto a baking sheet and roast for 35 to 40 minutes
- Sprinkle with more salt and serve
Roasted Cauliflower

- 1 head of cauliflower
- ¼ cup of olive oil
- 2 teaspoons sea salt
- 5 garlic cloves
Directions:
- Preheat the oven to 400 degrees
- Toss the cauliflower in the olive oil, garlic, and optional red pepper flakes on a baking sheet
- Sprinkle with salt, then roast for about 20 minutes, or until golden brown

- 4 golden beets, peeled and cut in cubes
- 2 tablespoons olive oil
- 1 teaspoon dried thyme leaves
Directions:
- Preheat oven to 425 degrees
- Toss the beets, olive oil, and thyme in a bowl until the beets are coated
- Cover a baking sheet with parchment paper and add beets, spreading them out so the pieces don’t touch; sprinkle with salt
- Roast in the oven for about 10 to 20 minutes, or until beets are tender
