French onion soup

Serves 8

Tip: Try serving this soup in traditional French fashion. Top each bowl with toasted bread or croutons.

  1. Add 2 teaspoons olive oil.
  2. Add 6 cups chopped onions.
  3. Saute for 5 minutes.
  4. Cook 15 to 20 minutes until caramelized.
  5. Add 6 cups low-sodium beef broth.
  6. Add 2 cups water.
  7. Add 2 tablespoons fresh thyme.
  8. Add 2 tablespoons low-sodium soy sauce.
  9. Add 1/4 teaspoon ground black pepper.
  10. Add 2 bay leaves.
  11. Simmer 20 minutes.
  12. Add 2 ounces Gruyere cheese.
  13. Place bowls on baking sheet.
  14. Broil for 1 minute until cheese melts.
