Fire roasted corn soup

Serves 12

Tip: Roasting develops the natural sugars in the corn to create a caramelized flavor. No fresh jalapenos? Use 1/2 teaspoon dried cayenne pepper.

  1. Place 4 cups corn kernels on baking sheet.
  2. Roast 8 minutes at 500 F until caramelized.
  3. Add 1 1/2 tablespoons olive oil.
  4. Add 3 cups chopped onions.
  5. Add 2 cups chopped carrots.
  6. Add 2 cups chopped celery.
  7. Add 2 teaspoons chopped garlic.
  8. Cook 5 minutes.
  9. Add roasted corn.
  10. Add 1/4 cup all-purpose flour.
  11. Add 1 teaspoon cumin.
  12. Add 6 cups vegetable stock.
  13. Add 2 jalapeno peppers.
  14. Simmer 30 minutes.
  15. Add 1 1/2 cups half-and-half.
  16. Add 1 teaspoon salt.
  17. Add 1/8 teaspoon white pepper.
  18. Add 1 tablespoon chopped parsley.
