Cranberry orange muffins
Serves 16
Tip: When baking, use Greek yogurt to reduce or replace shortening, oil or butter. This cuts fat and makes muffins extra moist and tender.
- Add 1 cup non-fat plain Greek yogurt
- Add 1 cup sugar
- Add 2 eggs
- Add 1/4 cup brown sugar
- Add 1/4 cup canola oil
- Add 2 tablespoons orange zest
- Add 2 teaspoons vanilla
- Add 1 3/4 cup all-purpose flour
- Add 1/4 cup flaxseed meal
- Add 1/2 teaspoon cinnamon
- Add 1 teaspoon baking powder
- Add 1 teaspoon baking soda
- Add 1/2 teaspoon salt
- Mix on low speed
- Slowly add dry ingredients to wet ones
- Mix for 1 to 2 minutes until incorporated
- Add 1 1/2 cups frozen cranberries
- Scoop 1/4 cup batter into each muffin tin
- Bake for 22 minutes at 350 F
