Garlic cauliflower potato mash

Serves 12

Tip: Don’t overwhip this cauliflower-potato mash or it will take on a paste-like texture.

  1. Boil 2 medium heads cauliflower.
  2. Process cooked cauliflower until smooth.
  3. Boil 4 large potatoes, cut into chunks.
  4. Place cooked potatoes into mixer.
  5. Place processed cauliflower into mixer.
  6. Add 2 tablespoons unsalted butter.
  7. Add 1/2 cup Greek yogurt.
  8. Add 1 tablespoon salt.
  9. Add pinch ground black pepper.
  10. Add 1 teaspoon garlic powder.
  11. Add 1 teaspoon chopped fresh thyme.
  12. Mix 2 minutes until well-incorporated.
