Video: Black bean quesadillas

Black bean quesadillas

Serves 4

Tip: You don’t need a lot of cheese in quesadillas — just enough to bind them together.

  1. Add 1 1/2 cups reduced sodium black beans.
  2. Add 1 cup zucchini, 1 cup frozen sweet corn and 2/3 cup red onion.
  3. Add 1/2 cup 2% sharp cheddar cheese.
  4. Add 1/4 cup chopped fresh cilantro.
  5. Add 1 teaspoon cumin.
  6. Add 1/2 teaspoon salt.
  7. Add pinch black pepper.
  8. Add 1/4 teaspoon Tabasco sauce.
  9. Place 1 tortilla in pan to warm.
  10. Place half bean mixture on one side of the tortilla.
  11. Fold to cover.
  12. Cook for 1 to 2 minutes.
  13. Flip and cook for another 1 to 2 minutes.
  14. Bake for 5 to 8 minutes at 350 F.
