Video: Sweet potato souffle

Sweet potato souffle

Serves 6

Tip: You can bake and mash sweet potatoes a few days in advance and freeze until ready to use.

  1. Sprinkle 1/2 cup panko bread crumbs.
  2. Add 4 cups mashed sweet potatoes.
  3. Add 1/2 teaspoon unsalted butter.
  4. Add 1 teaspoon chopped fresh thyme.
  5. Add 1/4 teaspoon salt and ground black pepper.
  6. Add pinch of ground nutmeg.
  7. Add 1 1/2 tablespoons cornstarch.
  8. Add 1 1/3 cup skim milk.
  9. Add cornstarch slurry to pan.
  10. Boil while stirring frequently.
  11. Stir in 1/2 cup Gruyere cheese.
  12. Whip 3 egg whites to firm peaks.
  13. Fold into sweet potato mixture.
  14. Bake for 20 minutes at 375 F.
