This meatless version is just as satisfying, thanks to a hearty mix of quinoa, walnuts, tomatoes and zucchini.<\/p>\n<ol>\n<li>Add 1 tablespoon olive oil.<\/li>\n<li>Add 1 cup chopped zucchini.<\/li>\n<li>Add 6 Roma tomatoes.<\/li>\n<li>Add 1\/2 cup chopped onion.<\/li>\n<li>Add 1 stalk celery.<\/li>\n<li>Add 2 tablespoons chopped walnuts.<\/li>\n<li>Add 3 garlic cloves.<\/li>\n<li>Add 2 teaspoons chopped fresh thyme.<\/li>\n<li>Cook until tender.<\/li>\n<li>Add 4 cups cooked quinoa.<\/li>\n<li>Add 1\/2 teaspoon ground black pepper.<\/li>\n<li>Add 1 teaspoon salt.<\/li>\n<li>Add 1\/2 teaspoon Parmesan cheese.<\/li>\n<li>Place 1\/2 cup quinoa mixture into each pepper half.<\/li>\n<li>Cover with foil.<\/li>\n<li>Bake 15 to 20 minutes.<\/li>\n<li>Uncover and bake for 5 more minutes.<\/li>\n<\/ol>\n<p>Created by the executive wellness chef and registered dietitians at the Mayo Clinic Healthy Living Program.<\/p>\n<\/div>","protected":false},"excerpt":{"rendered":"<p>These meatless stuffed peppers are packed with a hearty combination of quinoa, walnuts and fresh vegetables. <\/p>","protected":false},"author":1,"featured_media":0,"comment_status":"closed","ping_status":"closed","template":"","tags":[1678,1679],"class_list":["post-51216","mayo","type-mayo","status-publish","hentry","tag-course","tag-mainingredient","content_type-recipes"],"acf":[],"yoast_head":"<!-- This site is optimized with the Yoast SEO plugin v27.3 -
